Nothing says comfort food more than a crumble! This is a hug in a bowl. Serve with a generous dollop of double cream or custard.
Serves 4
Ingredients:
- 12 plums, destoned and halved
- 3 bramley apples, peeled, cored and diced
- 50g unsalted butter
- 1 tsp cinnamon
- 2 tbsp light brown sugar
- Pinch of salt
For the crumble :
- 200g plain flour
- 100g unsalted butter, diced
- 4 tbsp desiccated coconut
- 4 tbsp chai spiced mulberry granola
- 2 tbsp light brown sugar
Method:
- Preheat your oven to 180˚C. Make the crumble topping in a bowl by rubbing the flour and butter together. Once you get to a breadcrumb texture, add in the coconut and granola along with sugar. Spread out on a lined baking tray and cook for 20 mins.
- Cook the crumble filling in a large frying pan by caramelising the sugar, butter and cinnamon with plums and apple. Season with a pinch of salt. Cook for 15 mins until soft and sticky.
- Decant the filling into a pie dish and cover with the crumble topping. Return to the oven for 20 mins.
- Serve with double cream or custard.
